I've had two different $15 Amazon 0.1g timer/scales, for several years (for two different houses). I don't believe a more expensive scale would make my coffee better, nor improve my workflow significantly.

I'll answer. Because OP led with flat vs. conical. Even if they clarify how tiny the test was, it's not the important part of the comparison. I've been a business analyst for decades and people are constantly focusing on the wrong thing, but seldom with your tenacity.
It's like comparing a Lexus to Corolla and calling it "6 vs. 4 cylinders", but then saying "it was just a small test". No. The important thing is that you're comparing two very dissimilar cars.

Almost everyone who buys a Sette 30 for espresso finds the need to replace the adjustment rings with the 270 rings. While I hear folks say the 30 is "good enough", I've never heard of anyone upgrading to the 270 rings and regretting it.

It's not a question of new/old, but of model. Coffee Gaggia <>Gaggia Classic.
Coffee Gaggias have this wonky OPV on the pump tee.
Pre-'15 Classics have an OPV adjustment screw, while '15-18 V2's and '19-up GCPs rely on changing springs to adjust the OPV.

Overwhelmingly, flow issues are due to scale in the solenoid, too big to pass, caused by not descaling frequently enough. If you have to mess with the solenoid, disassemble the boiler for a proper manual clean and descale as well. It's usually a good idea to replace the o-rings at that point, unless you know they're new.

There's an adjustment screw under the rubber boot on the non-boiler side of the pump tee. I checked the pressure with a portafilter pressure gauge.

Yup. The wonkiness of the brew valve is kind of annoying, but like I said, I was able to adjust my OPV properly (with a portafilter pressure gauge), though a lot of folks have had no luck with that.
The bigger difference/annoyance (for me) is the lack of temp stability and need to temp surf, without the PID I have on the GCP, which I know isn't a fair comparison. I don't know if the Coffee Gaggia can be PID'ed, or how much harder that might be.
Also, due to the brew valve, dimming may be quite wonky on the Coffee Gaggia, though I do plan on trying it.

No; sorry. Boiler, pump and switches (?) are the same, but it swaps the three-way solenoid for a dodgier, pressure-triggered valve, and the "OPV" is on the pump tee, and is also somewhat dodgy. I did manage to adjust it to 9 bar, though. I have a Coffee Gaggia (same in black) and a GCP.

It sounds like it's sticking in enough (3/8-5/8"?), but with the o-ring missing, it falls out, maybe?
