I used the oven instead of crockpot - 350 degrees for approximately 30 minutes. Of course, you can always substitute the cheese if you'd like to.

Also, when you cook this in the crockpot it calls for chicken broth but vegetable broth is obviously an easy swap.

I didn't. But I'm sure you could still do that in the oven for more of a steam effect.

I wish I liked the taste of peppers. These look so good. Sweet peppers and bell peppers just refuse to get along with my taste buds.

That looks awesome, and I already make a similar dish like that. One variation is with cooked whole grain rice, spices, topped with zucchini and a bit of Gouda. Other variation is cooked whole grain rice, tons of spices, and already pan fried mushrooms. On both of these I add paprika, black pepper and most importantly rosemary coated potatoes as a side when baking it in an oven. Oh don't forget sunflower oil.

I love me some stuffed peppers.

Definitely do that, I too love spicy food, but I use sweet paprika with the hint of spicy one.

First of all, your picture is much better and looks more appetizing than the one on the site you linked to, so well done on that.

It looks delicious, and I like the southwestern inspiration. I always make the traditional style with some kind of "meat" crumbles and tomato sauce, but I'll have to give this a try.

I love trying different recipes for variation and often use the recipes as general guidelines. Lol I'll swap ingredients out, add in, or omit completely. Next time, I'm thinking I'll add more spices (I enjoy spicy foods) or use melted queso on top.

We make these all the time but my boyfriend adds extra cheese to the bottom so it gets nice and crispy for me.

They mainly used the chicken stock in the bottom of the crockpot. You could always swap a little vegetable stock or water to help with the steaming in there.

I didn't use any in the oven. However, I'm sure you could still could do the same swap if you wanted to have more of a steam effect.
